FOCACCIA

Ingredients

Organically grown wheat flours
Spelt flours
Extra Virgin Olive oil
Water
Sea salt

This is a soft, white dough enriched with plenty of unctuous olive oil. Sometimes its served in slices, sometimes in chucks and often used to accompany a starter, a salad, soup or stew – great for mopping up tasty sauce!

Various toppings are traditionally added to make it extra special – among the favourites are, sea salt flakes and rosemary, garlic oil, mixed olives, pumpkin and sage, cherry tomatoes, red onion and many others – the choice is endless.

A very wet dough that is approximately 20 hours fermented with a longer warm ferment than my other doughs so that its really tasty but still mild and very soft.

This is our only pure white dough!
